I always store my leftovers in airtight containers or sealed bags. If you have a lot of a certain dish, many items like dips, baked goods, and quesadillas can be placed in an airtight container or wrapped tightly with plastic wrap and frozen for up to 3 months.
Yes! The majority of the ingredients I use in these recipes, such as fresh vegetables, whole grains, legumes, and plant-based proteins, can be found at your local grocery store. Nowadays, you can even find most types of vegan cheese at any market.
Most of the recipes in my collection can be easily adapted to meet needs like gluten-free, soy-free, or nut-free by making simple ingredient swaps. To make dishes gluten-free, I use gluten-free flours, pasta, or certified gluten-free oats. If I’m trying to avoid soy, I substitute tofu with chickpeas or lentils, and use coconut aminos in place of soy sauce. For nut-free options, I simply replace nut-based ingredients like cashews or almonds with seeds or omit them entirely.
