Make Fritter Batter: Place the milk, vanilla, egg, butter, flour, sugar, baking powder, cinnamon, and salt into a high-speed blender or food processor.

Blend Until Smooth: Blend until a smooth batter has formed. Scrape down the sides several times to ensure all of the batter ingredients have been combined.

Add Diced Cherries: Transfer the batter to a large bowl and stir through the diced cherries.

Prepare Oil: Heat the vegetable oil in a heavy saucepan or Dutch oven over medium-high heat. The pot should have high sides to catch any oil splashes. (If you have a deep fryer, you can use that too). Test the temperature of the oil by dropping a small amount of batter into the oil, and if it starts to bubble immediately, then it is ready. You can also use a candy thermometer to test the heat of the oil.

Add Batter: Drop large spoonfuls of batter into the oil using a metal spoon or ice cream scoop. Add as many as you can fit without overcrowding the pot. The first fritter batch should cook quickly.

Notes

  • The batter can be prepared by hand by whisking the ingredients together until smooth if you do not have a food processor or blender.
  • Make sure the oil isn’t too hot, if the fritter brown too quickly reduce the heat to ensure the fritter cook all the way through.
  • Fresh cherries are best in this recipe.
  • Substitute all-purpose flour for gluten free flour for gluten free fritters.
  • Drain on paper towl after cooking to remove as much oil as possible.
  • Make sure the fritters have cooled before adding the glaze otherwise the glaze will melt when added to hot fritters.
  • Brown sugar or coconut sugar can be used instead of white sugar.
  • Store leftovers in an airtight container in a cool dry place for up to 3 days.
