I use fluffy popcorn, colorful candy melts, and bright pink food spray. This is what I make when I need something sweet on the tongue and the eyes. I make this in just 18 minutes, making it ideal for last-minute rainbow fun. The crunchy texture, combined with a creamy candy coating and cheerful sprinkles, takes a classic to mythical new heights!

Popcorn is a classic snack, with endless potential. This snack gives my kids the same kind of excitement that my jalapeno popcorn gives my husband and me. For my kids, it is as if an old classic has been reimagined with them specifically in mind. Whenever I make this, it turns into a group kitchen project, instead of just a snack. Next time you have a family movie night, try this one for your kids, and the jalapeno version for yourself, too!
I created this unicorn popcorn recipe after seeing an endless variety of pastel-colored popcorn, with an equally wide variety of preservatives. Since my kids already loved my vegan caramel popcorn, which is another one you have to try, I knew they would appreciate a more colorful approach. I last made these for my kid’s birthday, and naturally, they were a hit, and had many moms asking for the recipe. Funnily enough, the next time I saw this popcorn was at a grown-ups book club meeting. Ha! No matter what your age, you should indulge in a vivid bowl of this.
👩🏽🍳 Why I Love This Recipe
As a nutritionist, I love popcorn as a high-fiber, low-calorie snack that keeps you fuller for longer. Not to mention the polyphenols, which promote digestive health, lower blood sugar levels, and support heart health. As a mom, I love that I can turn this into something visually appealing and exciting for my kids. I can treat them to something sweet while having a clear conscience.
The method of this unicorn popcorn is straightforward and reliable. I spread the already popped popcorn in a single layer, lightly mist it with food spray, then drizzle the melted candy over it in stages. This ensures every piece is coated, without becoming soggy. I make sure to let the first drizzle harden before I add the next, keeping my popcorn crisp and fresh.
I associate unicorns with whimsy, pastel colors, and lightness. And that’s what this popcorn is. Unlike caramel corn or other clustered candy snacks, this is delicate, crunchy, and vibrant. Perfect for anyone who loves playful desserts. The first time I ever made this popcorn was during a phase where my kids had a major fixation on slimes, especially the brightly colored ones.
I remember there even being an unopened unicorn slime in the kids’ room, which was being saved for a special occasion. I made sure to mimic the colors exactly. When my youngest saw the bowl, I was met with wide eyes and a gasp. They ran to the room to make sure I had not used their slime on the popcorn. I guess I nailed the colors. Ha!

🥘 Ingredients
All I need is a handful of simple ingredients to bring this bowlful of rainbows to life. Here is what I use:

Popcorn: I use freshly popped plain popcorn for the base. Air-popped or stovetop popcorn works well, or you could even try my Instant Pot popcorn.
Candy melts: I melt pink, blue, and orange candy melts for a colorful drizzle. I make sure to choose high-quality melts, so they smooth out easily in the microwave.
Pink food spray: I lightly mist the popcorn with pink food spray for that signature pastel look. I always prefer natural food coloring when I can find it.
Unicorn sprinkles: I use these as a finishing flourish and sprinkle them on while the candy is still wet, so they stick to popcorn properly and add texture.
🔪 How To Make
This recipe is super simple; in fact, it is easy enough for kids to follow. This is how to do it:
Prep the popcorn: I start by lining two baking sheets with parchment paper and spreading my freshly popped popcorn in a single layer.

Spray the popcorn: Next, I lightly mist the popcorn with pink food spray, allow it to dry, then gently turn the pieces and spray the other side for an all-over coating.

Heat candy: I separate the candy melts colors into microwave-safe bowls and heat for 30-second intervals, stirring in between until smooth.
Drizzle popcorn: Then I transfer half of each melted candy color into a piping bag, snip a small corner, and drizzle over the popcorn. After it hardens, I give it a gentle toss.

Repeat the process: I repeat this process with the remaining candy coating.

Add sprinkles: Lastly, I add my sprinkles while the final layer of candy coating is still soft. I let everything sit full before serving.

💭 Expert Tips
My #1 Secret Tip for this unicorn popcorn recipe is to use freshly popped popcorn that is completely cool and dry before adding any spray or candy. Warm popcorn creates steam, which softens the coating. This leads to a chewier texture instead of that light crisp crunch I am looking for.
Other Tips To Keep In Mind:
- Keep the drizzle thin: I make sure to drizzle in thin streams instead of pouring, to make sure the popcorn does not clump together.
- Dry between layers: It is very important to allow each layer of candy melts to harden before adding the next one. This is how I protect the crunch.
- Use gentle hands: I prefer using my hands to gently toss and coat the popcorn, as a spoon might break or crush the pieces.
- Low moisture spray: I make sure to use a light spray to avoid soggy popcorn.
- Use smaller sprinkles: Large sprinkles may not adhere to the candy drizzles as well as smaller sprinkles. Sometimes I like to use a mix for a varying texture.
📖 Variations
I have had so much fun with this recipe over the years. These are the ones that have stuck out the most:
Cotton candy mix: I tear one cup of fresh cotton candy into small pieces and fold it into the warm candy drizzle, melting it slightly, adding extra sweetness. Be sure to keep a few pieces to garnish the top, sometimes with a small dash of edible glitter. This is something one of my kids came up with, and they like to use rainbow colored cotton candy.
Chocolate swirl: For added creaminess, I melt 1/2 cup of white chocolate chips and drizzle it over the top with the candy melts. This also gives a great contrast against the pink popcorn. This is great for chocolate lovers who want to stick to the theme but still get their fix.
Pastel crunch mix: After the candy has set, I add in 1/2 cup of pastel candy-coated chocolate of my choice; this gives another burst of color and added texture. My husband loves this because it reminds him of mixing chocolate candy into his movie popcorn as a kid.
🍽 Serving Suggestions
This unicorn popcorn deserves to be served with equally vivid dishes. I like serving it with other pastel items like my vegan strawberry milk as a healthy and refreshing beverage. And of course, unicorns and rainbows go hand in hand, which is why I love serving it with my rainbow chocolate cake. Next time you have a celebration that calls for color, make sure to add these items to the menu!
Last Halloween, I made a large tray of this popcorn, which was a great contrast to the darker, spookier items haunting our table. Next Halloween, try this popcorn with a side of my Halloween monster cookies for the kids and glasses of my witches brew cocktail for the adults. One of the kids at the party loves Halloween but is not overly fond of anything scary, which is why this popcorn was her favorite!
🧊 Storing And ♨️ Reheating
Refrigeration: This recipe is not suitable for refrigeration as it causes sogginess. Instead, I store the fully cooled popcorn in an airtight container at room temperature for up to 3 days.
Freezing: I do not recommend freezing this recipe as the candy coating can develop condensation as it thaws, which affects the texture.
Reheating: I do not reheat this popcorn. However, if it softens slightly, I spread it on a baking sheet and let it air-dry at room temperature to restore some crispness.
❓ Recipe FAQs
This usually happens when moisture gets trapped in the popcorn. That is why I make sure that my popcorn is completely cool before adding the coating. I like laying my cooked popcorn on a drying rack in a single layer to ensure that no moisture is trapped.
The most natural alternative to pink food spray would be beetroot powder. I would either dust it over the popcorn or add it to the oil or butter while cooking it on the stove top. This may not give the most complete and even coating compared to the spray, but it is more natural. You could also forgo the spray entirely and have a white base with more colored candy melted.
Clumping happens when too much melted candy is concentrated in one spot. Which is why I use a piping bag with a small opening for a thin drizzle. After the first layer sets, I also make sure to gently separate any clusters with my hands before adding the next layer.
