This healthy easy arugula smoothie is one of my favorite ways to get a healthy dose of greens every morning! Arugula is one of the most nutritious cruciferous vegetables – it’s packed with fiber, antioxidants and vitamins. It also helps stabilize your blood sugar, so you won’t end up with those sugar highs and crashes you might get from other fruit based smoothies.

The sweetness from the mango, apples and banana slices helps to balance out the peppery flavor of the arugula. This arugula smoothie recipe requires just a handful of simple ingredients, easily found at your grocery store!

Arugula: Fresh arugula is a wonderful way to incorporate different kinds of greens into this healthy smoothie. Arugula is a cruciferous vegetable with anti-inflammatory properties – making it super healthy for you. It has a distinct taste that is excellent with the sweet flavor of a ripe banana, a little bit of lime juice, and chunks of sweet mangoes.

Apple: These antioxidant-rich apples add a sweet flavor to this delicious smoothie. Cut them into chunks before putting them in the blender to make sure they smooth out. I used fuji apples, but you can use green apples or any variety of apples – just keep in mind that fuji apples will likely be the sweetest option!

Banana: Mood-boosting bananas are sweet and are perfect for this healthy recipe. Bananas also do double-duty in smoothies because they help thicken and smooth them out. They are a fantastic texture equalizer. 

Mango: This green arugula smoothie wouldn’t be a tropical masterpiece without the natural sweetness of mango slices. Be sure the fruit is ripe before adding it in by tasting a bit first. Make sure to peel off the skin before adding the slices; otherwise, you’ll have little pieces of it in your drink.

Lime: Lime juice is tart and balances the sweetness of the bananas and mangoes, while the acid balances the bitterness of the arugula. 

Chia Seeds: You can find fiber-rich chia seeds at most grocery stores, or you can order them online. 

Coconut Water: Unsweetened coconut water is the perfect flavorful liquid for this tropical smoothie. Use more for a thinner smoothie and a little less liquid for a thicker smoothie with arugula.

📖 Variations

  • Other Flavors: Try adding in any of these ingredients – ripe pear, fresh ginger, strawberries, kiwi fruit, avocado, plain Greek yogurt, lime juice, or lemon juice to change things up.
  • Arugula Pineapple Smoothie: Instead of the mango, try an equal amount of fresh pineapple! Or for a sweeter smoothie add both pineapple and mango.
  • Change The Liquid: Try your favorite juice or non-dairy milk, like apple juice, orange juice, unsweetened almond milk, soy milk, oat milk, cranberry juice, or coconut milk. Keep in mind that using fruit juices will increase the added sugar in this recipe considerably.
  • Spinach Arugula Smoothie: Add in 1-2 cups of fresh baby spinach for even more health benefits! You can also add any of your favorite greens to your green juice smoothie. A kale and arugula smoothie would taste great, or try swiss chard or collard greens too!
  • Fresh Or Frozen Fruit: You can use fresh fruit or frozen, diced fruit, or ice cubes for a thicker drink.
  • Arugula Protein Shake: Add one tablespoon of vanilla protein powder for an extra boost of protein and flavor. A healthy serving of muscle-building protein is an easy way to have great nutrition. If you add protein powder, one serving of this recipe will pack up to 28 grams of protein!
  • Nut Butters And Seeds: Chia seeds are a great way to get extra fiber, but you can replace them with flax seeds or nut butter like almond butter, peanut butter, or cashew butter.
  • Smoothie Bowl: This delicious drink is packed with healthy ingredients and would also be perfect in a bowl. Smoothie bowls are great because there’s more space to top them with sliced fruit, cacao nibs, granola, coconut, and chocolate chips.

Blend The Ingredients: Add all ingredients into a high-speed blender and blitz until smooth.

💭 Expert Tips

  • Fresh baby arugula is best for this recipe. Arugula has a strong flavor, so I don’t recommend packing the measuring cup too tightly – you can always add more arugula if you like once you’ve blended this drink and tasted it!
  • Add a dash of maple syrup to add a little more sweetness to this vegan arugula smoothie.
  • Chia seeds are optional and can be left out if you don’t want to include them. 
  • If your arugula smoothie is too thin, you can add ice to thicken it. 
  • For the best results, use a powerful blender. I use a Vitamix, but any high powered blender will work. The key is to pulverize the fruits & veggies so you don’t have any graininess in your smoothie!
