This jalapeno simple syrup is exactly what you need to transform your beverages into something unexpected and extraordinary. I simmer fresh jalapenos with granulated sugar and water until it becomes a smooth, pourable syrup with concentrated flavor. It takes just 15 minutes and 3 ingredients to make this sweet, spicy, and versatile liquid.

There is not a single summer that has gone by without me making some kind of simple syrup. They are deliciously convenient and can liven up sparkling water. The capsaicin in the fresh jalapenos infuses into the syrup, creating a balanced heat that is warm rather than unbearable. If you love cordials but would prefer to stick to fruit-based flavors, try my peach simple syrup instead,  for a sweet more flowery flavor. 

My sister and I love indulging in a sneaky little homemade drink now and then, and usually an Italian margarita is our favorite. Recently, she commented that since we prefer staying in for a girls’ night, we should at least try to liven up our drinks. I totally agreed. The next time she came over, we used this jalapeno simple syrup in our frozen margarita cocktails. The combination of the lime and jalapeno was so sublime, we finished the jug before my husband even got to try it. Whoops. Ha!

As a nutritionist, I love that this jalapeno simple syrup packs serious flavor, with just a few ingredients, and does not rely on additives or colorants. So many store-bought syrups have a distinctly artificial flavor that I just cannot get behind. The capsaicin in jalapenos also have inti-inflammtorty properties while also supporting the metabolism. It is not just a syrup that tastes good. This recipe is naturally gluten-free, vegan, and dairy-free, and can be used for so many different things. Even my kids enjoy this sweet, spicy syrup.

The thing I love most about simple syrups lies in their name. It is SIMPLE! All I need is equal parts water and sugar with my flavoring, and in a few minutes, I have a liquid that rivals anything found on the shelves of a grocery store. All I do is stir my sugar into the water, bring it to a boil, reduce the heat, and let it simmer with my jalapenos for 10 minutes. Straining the syrup through a fine mesh gives me a clean, clear syrup that mixes into drinks seamlessly. 

Last spring, I decided to bring a bottle of this syrup as a gift for the host, instead of the usual bottle of wine. I made sure to include a handwritten note with a few suggestions for cocktails, and alcohol free beverage as well as the recipe. The next afternoon, I received a groggy phone call from the host. After everyone had left, she tried a bit of the syrup on her finger, and she and her husband stayed up making margaritas the rest of the night. Ha! 🥘 Ingredients

This jalapeno simple syrup uses just 3 ingredients to create its unique flavor. This is what I use:

Fresh jalapenos: This gives my syrup its signature flavor and heat. I also keep a few slices aside to add to my jar after my syrup has cooked. 

Granulated sugar: I use white granulated sugar for a clean, neutral sweetness and appearance that does not overpower the jalapeno. Brown sugar yields a cloudy, slightly off-color syrup that may look unappealing to some people.

Water: I combine the water with the sugar for the classic simple syrup base.

🔪 How To Make

I use a small pot to make this syrup from start to finish. This is how I do it:

Prepare the jalapenos: I slice the jalapenos into rounds and set them aside.

Boil ingredients: Next, I combine my water, sugar, and jalapenos in a pot, stir slightly, and bring to a boil.

Simmer: Once boiling, I reduce the heat and allow the mixture to simmer for 10 minutes until the sugar is completely dissolved.

Strain the syrup: Then I pour the syrup through a fine mesh strainer, and into a sterilized glass jar, and allow it to cool.

Refrigerate: Once cooled, I add a few slices of fresh jalapenos and store them in the fridge for up to 1 month.

My #1 Secret Tip for this jalapeno simple syrup recipe is to test the consistency before removing it from the heat. I dip a spoon into the syrup and allow it to drip back into the saucepan. If it flows off quickly and is watery, it needs a few more minutes. The syrup should drip down slowly in separate drops rather than a continuous stream. 

Other Tips To Keep In Mind:

  • Wear gloves: I always wear gloves when working with jalapenos. This way, I make sure that I avoid chili burn.
  • Prevent crystallization: While the syrup simmers, I use a wet basting brush to wipe down the sides of the pot for any residue. I also make sure not to stir the mixture as it simmers, as this encourages crystal formation.
  • Adjust the consistency: For a thicker syrup, I let my mixture simmer for a few extra minutes and allow more water to evaporate. Alternatively, I use 1 part water to 2 parts sugar from the start.
  • Sterilize the jar: Since this syrup keeps for a long time, I always sterilize my jar to extend the shelf life and to get rid of possible germs.

📖 Variations

I was surprised at the different ways I could flavor this jalapeno simple syrup, without compromising on the key flavors. I recommend trying these 3 variations:

Serrano upgrade: I swap out the jalapenos for an equal amount of serrano pepper. This syrup is noticeably hotter, with a more complex flavor. I made this version for a friend of mine who has an impressive heat tolerance, and he loved it. 

Lime infusion: For a fresh citrus note, I add the juice of 1 lime and a few strips of zest into the pot with the jalapenos. This version is very refreshing over crushed ice and sparkling water. 

Mint boost: I chiffonade a few sprigs of fresh mint and add it to the syrup mixture as it simmers, which creates a cooling contrast to the jalapeno. Whenever I use this, I add a few more sprigs of fresh mint to liven up the flavors. 

🍽 Serving Suggestions

Whether I am using this jalapeno simple syrup in a cocktail or in a jug of sparkling water with cubes, I always make sure to serve it with other drinks or dishes that highlight the complex sweetness in this syrup. I recommend drizzling some of this simple syrup over a few slices of grilled pineapple to bring out the flavors in the fruit in a way you never expected. If using it in a beverage, make sure you have a plate of my vegan jalapeno poppers on the table too! 

I have already begun planning my menu for Cinco de Mayo, and have been experimenting with different dishes. My jalapeno popcorn will make its annual appearance along with something a bit different. Recently, I added some of this jalapeno simple syrup into my lemon popsicles, for a cold treat with a touch of unexpected heat. I was not sure if this combination would work, but all I can say is… WOW! Hopefully, I have time to experiment with a few other flavors too. 

🧊 Storing And ♨️ Reheating

Refrigeration: I store cooled syrup in a sterilized mason jar in the fridge for up to 1 month.

Freezing: This syrup is not suited to freezing, as the high sugar content prevents it from freezing properly.

Reheating: If the syrup has thickened too much after refrigeration, place the sealed jar in a bowl of warm water to loosen it up. I do not reheat the syrup directly as it will change the flavor. 

❓Recipe FAQs

Why is my jalapeno simple syrup cloudy instead of clear?

Cloudiness in a simple syrup is usually a result of undissolved sugar particles or particles released from the jalapenos during cooking. To fix the sugar issue, I make sure the mixture reaches its full boil and stir during the early stages to help the sugar dissolve. If the color is from the peppers, try adding a piece of cheesecloth to the mesh strainer to catch even the smallest particles. 

Can I remove the seeds from the jalapenos before making the simple syrup?

Yes, this is an entirely personal choice based on your heat preferences and tolerance. For a milder heat, I recommend removing the seeds along with the white membrane running along the inside of the jalapeno. During storage, avoid adding fresh slices of jalapeno as this intensifies the flavor and the heat during refrigeration. 

How can I tell if the syrup has gone bad?

Properly stored fresh jalapeno simple syrup should keep in the refrigerator for up to one month. If you are unsure of the expiration, I recommend looking out for any mold that may appear on the surface or around the fresh jalapeno, or any sour fermented smell that comes from the jar. A slight color change or cloudiness may occur naturally as it sits over time, but it should not be accompanied by an unusual smell or texture.
