Jalapeno Simple Syrup

This jalapeno simple syrup is exactly what you need to transform your beverages into something unexpected and extraordinary.  I simmer fresh jalapenos with granulated sugar and water until it becomes a smooth, pourable syrup with concentrated flavor. It takes just 15 minutes and 3 ingredients to make this sweet, spicy, and versatile liquid.

  • Slice the jalapenos, set aside.
  • Bring the water, sugar and sliced jalapenos to a boil in a medium pot.
  • Reduce the heat and simmer for 10 minutes.
  • Pour the syrup through a sieve and into a sterilized glass jar.
  • Store in the fridge for up to a month.

Notes

  • My #1 Secret Tip for this jalapeno simple syrup recipe is to test the consistency before removing it from the heat. I dip a spoon into the syrup and allow it to drip back into the saucepan. If it flows off quickly and is watery, it needs a few more minutes. The syrup should drip down slowly in separate drops rather than a continuous stream. 
  • Wear gloves: I always wear gloves when working with jalapenos. This way, I make sure that I avoid chili burn.  
  • Prevent crystallization: While the syrup simmers, I use a wet basting brush to wipe down the sides of the pot for any residue. I also make sure not to stir the mixture as it simmers, as this encourages crystal formation.  
  • Adjust the consistency: For a thicker syrup, I let my mixture simmer for a few extra minutes and allow more water to evaporate. Alternatively, I use 1 part water to 2 parts sugar from the start.
  • Sterilize the jar: Since this syrup keeps for a long time, I always sterilize my jar to extend the shelf life and to get rid of possible germs.
