Please read my disclosure. My healthy cheesecake takes just 10 minutes of prep time, a handful of ingredients, and a loaf pan. It comes out of the oven with a dark, caramelized top and a center that sets up thick and creamy in the fridge. There’s no crust to press and no water bath, which makes it perfect for beginner bakers or anyone who wants an easy, lightened-up cheesecake!

I love cheesecake, but the classic recipe often leaves me feeling heavy and tired. I wanted a version I could have on a weeknight, made from things already in my fridge, that still tasted like dessert.
When I started testing, I compared two popular yogurt cheesecake recipes side by side. One used four eggs, a lot of cornstarch, and baked until a toothpick came out clean, which is how you build a spongy cake, not a cheesecake.
The other was the same Basque-style: thick Greek yogurt, just two eggs, a hot oven, and a long chill. I went with the Basque method and made one change of my own, swapping plain yogurt and maple syrup for vanilla Greek yogurt so the yogurt does the sweetening.
Now it’s the dessert I make on Sunday so there’s something sweet in the fridge for the week. If you’d rather skip the oven, my no bake salted caramel cheesecake is one I make regularly that’s always a hit. But when I want something similar to regular cheesecake, this is the recipe I turn to!
👩🏽🍳 Why I Love This Recipe
A traditional Basque cheesecake is built on cream cheese, heavy cream, and sugar. This one swaps all three for whole-milk vanilla Greek yogurt, which brings the creamy texture plus protein, and makes this cheesecake healthier than most. Each slice has about 7 grams of protein, and with cornstarch as the only thickener, it’s also naturally gluten-free.
My method is what makes yogurt behave like cheesecake. Two eggs and 2 tablespoons of cornstarch set the custard without turning it rubbery, and the 425°F oven caramelizes the top while the middle stays soft. I pull it from the oven with a jiggle in the center, and I let the fridge finish the job, which gives a dense, sliceable texture instead of a spongy one.
It’s also low effort. Everything goes in one bowl with one whisk, the loaf pan needs only a sheet of parchment, and most of the time is hands-off chilling. That makes it easy to bake the night before a special occasion or a dinner with friends.
🥘 Ingredients
I just use 5 ingredients for this recipe! It’s so simple, but every ingredient has a clear job.

Vanilla Greek yogurt: I use whole-milk (4 to 5%) vanilla Greek yogurt, and I let it sit out for about 30 minutes so it whisks smoothly. The fat gives the cake its creamy, cream-cheese-like texture, and the yogurt’s own sweetness means I don’t need to add any sugar. Brands vary a lot in sweetness, so I always taste mine first. Substitute: Use plain whole-milk Greek yogurt (1½ cups) plus 2 to 3 tablespoons of maple syrup as a 1:1 replacement for a tangier cake.
Eggs: I use 2 large eggs at room temperature. Just two set the custard while keeping the center creamy.
Cornstarch: I sift it in so it disappears into the batter without lumps. It helps the cake slice cleanly and keeps the recipe gluten-free. Substitute: Try arrowroot powder (2 tablespoons) as a 1:1 replacement.
Vanilla extract: I add pure vanilla to round out the vanilla already in the yogurt. If my yogurt has a strong vanilla flavor, I drop it to ½ teaspoon.
Salt: I add a small pinch, and I don’t skip it. When all the sweetness comes from yogurt, salt is what makes it taste like dessert instead of breakfast.
🔪 How To Make
I always start by setting the yogurt and eggs on the counter so they’re at room temperature when the oven is ready. Here’s how I make this cheesecake from scratch:
Prep the pan & taste the yogurt. I preheat the oven to 425°F (220°C) and line an 8×4-inch loaf pan with parchment, leaving extra paper standing above the sides. Then I taste a spoonful of the vanilla yogurt. If it tastes more tangy than sweet, I add 1 tablespoon of maple syrup or honey to the batter.
Whisk gently: I whisk the yogurt, eggs, and vanilla together until smooth. A hand mixer or electric mixer both work here.

Add the cornstarch and salt: I sift in the cornstarch, add the salt, and whisk gently until no lumps remain.

Bake: I pour the batter into the pan and bake until the edges are set, the top is deep golden brown, and the center still wobbles when I nudge the pan.

I start checking at 20 minutes.

Cool and chill: I let it cool completely in the pan at room temperature, then refrigerate it for at least 4 hours, preferably overnight. I lift it out by the parchment to slice.

💭 Expert Tips
My #1 Secret Tip for this recipe is to trust the jiggle. I pull the cheesecake when the edges are set and the center still moves a little. It looks underdone, but carryover heat and the chill firm it into a creamy slice, and avoids the mistake of overbaking.
Other Tips To Keep In Mind:
- Check early in a loaf pan: The center of a loaf pan sets faster than a round pan, so I start checking at 20 minutes instead of trusting the timer.
- Give it tall parchment walls: The batter puffs in the hot oven. Extra overhang keeps it contained and gives me handles for lifting it out.
- Slice with a warm knife: I run my knife under hot water, dry it, and wipe it between cuts for clean edges.
📖 Variations
Once the base is done, it’s easy to change up the flavor. Here are my favorite versions:
- Lemon: I whisk in 1 tablespoon of lemon zest with the vanilla for a brighter, tangier cake.
- Cinnamon: I add ½ teaspoon of ground cinnamon with the cornstarch for a cozy fall version.
- Fruit: I add a handful of berries, or 1/2 cup diced stone fruits, or 1/2 cup diced mango on top of the cheesecake before serving.
🍽 Serving Suggestions
I serve thick slices with fresh fruit, or with a drizzle of honey when I want it a little sweeter. For a brunch spread, I serve it with my oatmilk honey latte, and alongside my healthy coffee cake and peanut butter chia pudding, so there’s a mix of warm and cold.
🧊 Storage Directions
Refrigeration: I cover the cheesecake and keep it in the fridge for up to 4 days.
Freezing: I wrap individual slices tightly in plastic wrap, then foil, and freeze them for up to 1 month. I thaw them overnight in the fridge.
❓Recipe FAQs
Traditional Basque cheesecake uses cream cheese, heavy cream, and sugar, and it bakes in a round pan. This version uses Greek yogurt and a loaf pan but keeps the same hot oven, burnished top, and soft center.
I don’t recommend it. Regular yogurt holds much more water, so the cake comes out softer and wetter and may not slice cleanly.
Beating air into the batter makes it puff in the oven and then sink and crack as it cools. I whisk gently and use room-temperature yogurt and eggs so the batter blends quickly without over-mixing.
Ovens vary, so the top can stay pale even at 425°F. I move the pan to the upper rack for the last 5 minutes, or broil it for 1 to 2 minutes while watching closely.

Healthy Cheesecake Recipe
Ingredients
- 1½ cups whole-milk (4 to 5%) vanilla Greek yogurt room temperature, about 360g
- 2 large eggs room temperature
- 2 tablespoons cornstarch
- 1 teaspoon pure vanilla extract
- ⅛ teaspoon fine salt
Instructions
- Preheat the oven to 425°F (220°C). Line an 8×4-inch loaf pan with parchment paper, leaving extra parchment extending above the sides.
- Taste the yogurt. If it’s mostly tangy rather than dessert-sweet, plan to add 1 tablespoon of maple syrup or honey to the batter.
- Gently whisk the yogurt, eggs, and vanilla (plus the maple syrup or honey, if using) until smooth. Avoid beating in air, which can cause puffing and cracking.
- Sift in the cornstarch and salt. Whisk gently until completely combined with no lumps.
- Pour the batter into the prepared pan. Bake until the edges are set, the center still has a gentle jiggle, and the top is deep golden brown. Start checking at 20 minutes.
- Let the cheesecake cool completely in the pan at room temperature.
- Refrigerate for at least 4 hours, preferably overnight, to finish setting.
- Lift out using the parchment, slice, and serve with fresh berries.
Notes
- Use whole-milk vanilla Greek yogurt; low-fat or nonfat versions turn rubbery.
- If the yogurt is strongly vanilla-flavored, reduce the extract to ½ teaspoon.
- For a golden (not caramelized) top, bake at 400°F for 30 to 40 minutes, checking at 25 minutes.
- Store covered in the fridge for up to 4 days.
