BBQ Jackfruit Burrito Bowl
Add 1 tbsp oil, red onion, molasses, garlic, balsamic vinegar, & red wine vinegar to a pan & cook over low-medium heat. Stir often and cook for 20-30 mins.
Add Dijon mustard, spices, tamari, liquid smoke, tomato paste, & water to the onion mixture & simmer for 5 minutes. Add the sauce to a blender and blend until smooth.
Preheat oven to 400° F. Add 2 drained cans of jackfruit to a tray, and break it up.
Pour the bbq sauce on the jackfruit & mix to incorporate. Cover with foil & bake for 25 mins. Remove foil & bake for another 5 mins.
Once cooked, mash until fully pulled.
In a bowl, combine carrots, red cabbage, lime juice, and oil. Mix to combine.
Assemble bowls. Add the jackfruit mixture, refried beans, rice, cabbage mixture, & season with salt / pepper. Add the avocado on top and enjoy!
