Cooler weather does not mean going without fresh salads, and my fall kale salad with butternut squash is perfect for autumn weather. I pack it with roasted squash, crisp apples, dried cranberries, and crunchy pecans over a bed of tender kale and spinach. The maple Dijon dressing brings all those fall flavors together to create a hearty side dish that is ready in 50 minutes.

Fall kale salad with apples and butternut squash.

Kale salads have a permanent place in my kitchen, and this fall kale salad with butternut squash is ideal for the cooler months. In summer, I stick to a lighter kale salad with lemon dressing, but I love the way the seasonal produce yields a colorful salad that reminds me of autumn leaves. Be sure to make this salad if you enjoy keeping things light but still want comforting flavors.

This fall kale salad with butternut squash was created from my genuine love of kale and all the ingredients I associate with autumn. I like to think of it as “if Thanksgiving were a salad.” It is similar to a roasted pumpkin salad, but the butternut provides a sweeter, almost nutty flavor and smoother texture. I made it for a holiday party one year, and despite the cold weather, everyone was happy to have fresh greens on their plate

Fall kale salad with butternut squash really appeals to me as a health coach, especially from a nutrition standpoint. Kale and spinach provide fiber, vitamin A, and calcium, while the butternut adds natural sweetness, potential health benefits, and even more vitamins A and C. With apples, dried cranberries, and pecans mixed in, each forkful has something different going on, from juicy fruit to crunchy nuts and tender roasted squash.

Making a fall kale salad with butternut squash combines a little cooking with fresh assembly. I start by roasting the chopped butternut squash until tender, then wash and chop the kale while it cooks. Next, I whisk the maple Dijon dressing, massage it into the kale to soften the leaves, add the spinach, slice the apples, and arrange the greens with the squash, cranberries, and pecans.

Thanksgiving at relatives’ houses can be a bit tricky as a vegan, but this salad is one I take with me wherever I go. In the beginning, I could see the look on people’s faces when I told them that I would be bringing a salad with a few other vegan dishes. I deliberately undersell this one and get a real kick out of seeing everyone’s faces when I set it on the table. Since those early days, I now get relatives calling me to make sure that I am bringing this salad. Add this salad to your fall menu for a colorful plant-based meal.

🥘 Ingredients

Each ingredient in this fall kale salad with butternut squash is intentional. This is everything I use to create the perfect balance of seasonal flavors:

Kale, butternut squash, spinach, cranberries, pecans, apples, pepper, salt, cinnamon.

Kale: I use chopped kale as the main green since it has enough structure to stand up to the dressing and toppings.

Spinach: This softens the overall texture and adds another layer of leafy greens to the salad.

Butternut squash: I cut the squash into 1-inch pieces so it roasts until tender enough to pair with the greens.

Seasoning: A mix of cinnamon, salt, and pepper rounds out the seasoning and adds warmth to the roasted butternut squash.

Honeycrisp apples: I use thinly sliced Honeycrisp apples for their crisp texture and sweet, tart flavor.

Dried cranberries: Sugar-free dried cranberries add a stunning pop of color along with their tart, fruity flavor.

Pecans: These add a satisfying crunch to the salad.

Vinaigrette: I combine vegetable broth, apple cider vinegar, pure maple syrup, Dijon mustard, minced garlic, thyme, and pepper for a robust dressing that pairs perfectly with all the ingredients.

🔪 How To Make

This is the step-by-step process I follow when making my fall kale salad with butternut squash:

Preheat and prepare butternut: I preheat my oven to 400F and chop the butternut squash into 1-inch pieces. Then I mix the squash with olive oil, salt, pepper, and cinnamon until each piece is seasoned.Diced butternut squash topped with spices in a mixing bowl.

Roast butternut: I arrange the squash on a parchment-lined baking sheet and roast it for 25-30 minutes until tender.Roasted butternut squash on a baking sheet.

Prepare kale: While the squash roasts, I wash the kale, remove the stems, and finely chop the leaves. Chopped kale in a mixing bowl.

Make dressing: Next, I whisk the vegetable broth, apple cider vinegar, Dijon mustard, maple syrup, garlic, thyme, and pepper in a small bowl until well combined. Maple glaze dressing ingredients in mixing bowl.

Massage kale and add spinach: I pour the dressing over the kale and massage the leaves with my hands for 2-5 minutes until they soften and become darker. Then I add the spinach and gently toss it with the kale. Kale greens massaged with dressing.

Slice apples: After that, I thinly slice the apples.Apple slices on a cutting board.

Assemble: I arrange the dressed greens on a serving platter or in a large salad bowl, then add the roasted butternut squash, cranberries, apple slices, and pecans over the top. I serve the salad right away while the squash is still warm.Overhead of fall kale salad on a platter.

My #1 Secret Tip for this fall kale salad with butternut squash recipe is to massage the dressing directly into the kale before adding the spinach. Kale leaves are naturally sturdier than spinach, so spending a few minutes squeezing and rubbing the dressed leaves softens their texture and makes the salad more palatable.

Other Tips To Keep In Mind:

  • Cut evenly: I cut the squash into similar-sized pieces so they roast at a similar rate.
  • Soften squash: If I am cutting a whole butternut squash, I pierce it several times with a fork and microwave it for about 2 minutes first. This slightly softens the skin and makes peeling and cutting easier.
  • Flip the butternut: Halfway through roasting, I flip the butternut pieces so that they cook on both sides.
  • Dress at serving: I prefer to dress the salad shortly before serving so the fruit and greens maintain their best texture.
  • Protect the apples: If I know this salad is going to be sitting a while before serving, I brush the apple slices with a bit of freshly squeezed lemon juice to prevent them from turning brown.

📖 Variations

This fall kale salad is a great starting point and leaves plenty of room for creative additions. These are 3 of my favorite variations:

Pear and pomegranate: For a more sophisticated salad, I swap the apples for Bosc pears and replace the cranberries with pomegranate seeds. This creates a stunning salad, which I like plating individually for sit-down dinners.

Nut-free: I swap the pecans for 1/4 cup of toasted pumpkin or sunflower seeds when I need a nut-free version. I like using a mix of both, or adding crispy roasted chickpeas on top.

Root vegetables: In addition to the roasted butternut, I add roasted rainbow carrots or parsnips for an earthy flavor and crisp texture. I do this when I want the salad to be slightly heartier.

🍽 Serving Suggestions

To make this fall kale salad with roasted butternut part of your dinner menu, I recommend serving it with a side of protein. Vegan schnitzel pairs well, as does vegan meatloaf. For a lighter option, toss in a few cubes of crispy baked tofu teriyaki. And be sure to finish your meal with a seasonal dessert like healthy baked cinnamon apples.

After heavy Thanksgiving meals and plenty of vegan pumpkin pie, I like making this salad to serve with leftovers the next day. Last year we had a late lunch made up of vegan turkey roast, fresh fall kale salad, and rosemary roasted potatoes. Instead of reheating cranberry sauce, we poured a little extra vinaigrette over everything, which tasted delicious.

🧊 Storing And ♨️ Reheating

Refrigeration: I store leftover salad in an airtight container in the refrigerator. The chopped kale can keep for up to 3 days when stored properly. Once the kale has been dressed and massaged, I prefer to eat it within 1 day for the best texture.

Freezing: I do not freeze this fully assembled salad since the fresh vegetables and dressing will lose their texture. Instead, I freeze the roasted squash separately and use it later in another meal.

Reheating: I do not reheat the finished salad since it is served at room temperature. If the squash has been refrigerated separately, I reheat it in the oven or microwave and add it to freshly prepared greens.

❓ Recipe FAQS

Why is my kale salad bitter?

Kale can have a naturally bitter flavor, particularly when the leaves are mature or the stems are included. This is why I always remove the stems and massage the chopped leaves with the dressing for several minutes. The maple syrup and apple cider vinegar balance the bitter flavor.

What should I do if my dressing is too thin?

This dressing is intentionally light since vegetable broth is used as part of the liquid base. If I want a thicker consistency, I whisk in a little more Dijon mustard, starting with 1/2 teaspoon at a time until it reaches the texture I prefer. This will also yield a slightly stronger flavor.

How can I keep my roasted butternut squash from becoming mushy in the salad?

I make sure the squash pieces are cut to a similar size and arranged with enough space on the baking sheet for roasting. Crowding traps moisture around the squash, which can leave it softer rather than nicely roasted. I always let the cooked squash cool for a few minutes before adding it to the salad, so the warmth does not wilt the greens.

  1. Sounds great. When using dried cranberries in salads, I heat water in a kettle and pour it over the cranberries in a bowl. Cover with a lid and let them soak for 15–20 minutes. Then drain. You can also use the “cranberry water” in the salad or a dish. This makes the cranberries softer and they give off more flavor to the salad.4 stars
