Pink Latte Recipe (Beetroot Latte)

Swap out the classic latte for a creamy and nourishing Beetroot Latte. Warm spices, coconut sugar, and beetroot powder create a cozy yet nourishing cup of morning coffee. Ready in 10 minutes, my pink latte is the perfect way to start my day. The best part? It’s also naturally gluten-free, dairy-free, and vegan!

Instructions

  • Add the beetroot powder, cinnamon, ginger, vanilla extract and coconut sugar in a small bowl, along with 4 tbsp of almond milk. Stir to form a paste.
  • Add the paste and remaining almond milk to a small pot and whisk until smooth.
  • Bring to a boil.
  • Pour into 2 mugs and top with a sprinkle of cinnamon.

Notes

  • My #1 Secret Tip for this recipe is to dissolve the beetroot powder by heating it in milk. I like using the microwave for this, but I make sure to watch it closely so it doesn’t boil over.
  • Natural Sweeteners: For a natural sweetener, I use medjool dates, date paste or syrup, maple syrup, or coconut sugar.
  • Extra Protein: For an extra boost of protein, I add 1 tablespoon of collagen powder to my beetroot latte.
  • Frothed Milk: If I like frothed milk, I use a handheld milk frother. For really frothy milk, I find dairy milk works best.
  • Beetroot Powder Benefits: I love that beetroot powder has the same health benefits as raw beets.
