Add the sliced peaches, sugar and vanilla extract into a high speed food processor, blend until smooth.
Transfer to a small pot and bring to a boil. Reduce heat and simmer for 1-2 minutes.
Remove from the heat, allow to cool for 15 minutes before placing in the fridge to cool completely.
When chilled add the peach pureé and milk to a blender and blend until well combined.
Adjust sweetness to taste.
