Cream Cheese Toast (17 Ways!)

Busy mornings in my house mean quick but nutritious breakfasts, which is why this cream cheese toast is so popular during chaotic periods. I layer toasted whole wheat bread with whipped cream cheese, and juicy blueberries for a breakfast that tastes bright, creamy, and slightly sweet without being too rich. If I am making everything fresh, it takes me just 20 minutes to have it ready and on the table for my family.

Blueberry Compote

Instructions

  • Prepare the blueberry compote by adding 1 cup blueberries along with remaining compote ingredients to a saucepan and bring to a boil, stirring to ensure the compote doesn’t burn.
  • Reduce heat and simmer until the blueberries are cooked and the sauce has thickened. This may take between 4-6 minutes.
  • When compote has thickened remove from the heat and allow to cool.
  • While the compote is cooling prepare the whipped cream cheese by adding all ingredients into a mixing bowl and mix until well combined and smooth. Alternatively you can add the cream cheese ingredients to a food processor and blend until smooth.
  • Toast the sliced whole wheat bread in a toaster or in the oven until golden brown.
  • Evenly divide the whipped cream cheese and blueberry compote between the toasted bread.
  • Top with remaining fresh blueberries and a sprinkle of lemon zest if desired.
  • Serve immediately.

Notes

  • My #1 Secret Tip for this cream cheese toast recipe is to let the blueberry compote cool for a few minutes before spooning it onto the toast. Very hot compote releases steam into the bread, which softens the toast much faster.
  • Toast darker: I always toast the bread slightly more than usual for this recipe, as the crisp texture balances the creamy topping much better.
  • Use thick bread: Thinly sliced sandwich bread softens too quickly underneath the cream cheese and fruit. I get the best results with thick, hearty slices of bread. 
  • Whip thoroughly: I whisk the cream cheese until completely smooth, so it spreads easily without clumping. 
  • Room temperature cream cheese: Cold cream cheese does not whip properly and usually stays clumpy. I let mine sit at room temperature for about 30 minutes before mixing, then whisk it thoroughly until the texture looks light and spreadable.
