Boozy Popsicles

When I want to cool off with a childhood classic featuring a grown-up twist, I make these boozy popsicles. Made with fruit juice, my favorite liquor, and endless flavor combinations, they are refreshing, easy to personalize, and perfect for backyard barbecues and pool parties.

  • Mix the juice and liquor in a large pitcher.
  • Pour into popsicles molds. I use a 10 space mold for these.
  • Freeze for at least 4-6 hours or overnight.
  • Once set, carefully remove each popsicle and enjoy!

Notes

  • My #1 Secret Tip for this boozy popsicle recipe is to stick to the ratios. I always keep the liquid to alcohol ratio close to 4 parts juice to 1 part liquor. It gives plenty of cocktail flavor while still allowing the popsicles to freeze into the perfect icy texture. Too much alcohol can leave them soft and slushy instead of firm. 
  • Build flavor first: Before adding the liquor, I taste the juice mixture on its own. A balanced, flavorful base creates a much better finished popsicle since freezing naturally dulls sweetness slightly. 
  • Mix thoroughly: I give the mixture a good and proper stir before filling each mold so the alcohol is evenly distributed throughout every popsicle. 
  • Freeze overnight: Although they are usually ready after 4-6 hours, I prefer freezing them overnight whenever possible for the firmest texture. 
  • Leave a little space: I fill the molds almost to the top, but leave about 1/4 inch of space so the liquid has room to expand as it freezes. 
  • Run under cold water: Before serving, I run the molds under cold water for a few seconds. This allows me to remove the popsicles easily without any breakage.
