Boba Smoothie (4 Ways!)

I take my bubble tea to the next level with this creamy boba smoothie recipe. I combine my chewy tapioca pearls with a blend of fruit and plant-based milk for a smoothie with a sweet little bite in every sip. Best of all, it comes together in just 16 minutes and uses wholesome ingredients.

Instructions

  • Bring a small pot of water to a boil, add the tapioca pearls reduce heat and simmer for 5-6 minutes.
  • Strain the pearls, add to a small bowl while hot and stir through the brown sugar. Set aside and allow to cool.
  • Prepare the smoothie by adding all smoothie ingredients into a high speed blender and blend until smooth.
  • Divide the cooked tapioca pearls between 2 serving glasses and top with smoothie.
  • Serve and enjoy.

Notes

  • My #1 Secret Tip for this boba smoothie recipe is to cook the tapioca pearls shortly before serving. I make sure I have all my smoothie ingredients prepared and ready to go. This way, my pearls do not stand out for too long, at risk of becoming hard. 
  • Do not overcook: I watch the pearls closely as they cook, making sure they do not become too soft instead of chewy.
  • Rinse pearls lightly: I rinse the pearls lightly in warm water to remove any excess starch, making sure to keep them warm before adding the sugar.
  • Blend well: I blend the smoothie until it is completely smooth, allowing for a good contrast of textures with the pearls.
  • Use a bubble tea straw: Serve these smoothies with boba straws that are large enough for the tapioca pearls to fit through.
