15 Bean Soup Crock Pot Recipe

When I am in the mood for something filling with very little hands-on work, I make my 15 bean soup crock pot recipe. I use a colorful blend of dried beans, vegetables, and flavorful broth, which slow-cooks into a rich, comforting soup filled with plant-based protein and fiber.

Instructions

  • Rinse the beans and discard any debris. Add the beans to the crock pot.
  • Add all remaining ingredients, except the canned tomatoes and spinach, and stir.
  • Cover with a lid and cook on low for 7 hours or on high for 4 hours.
  • Once the beans are tender, stir through the canned tomatoes and sliced spinach. Cook for a further 20 minutes.
  • Adjust the seasoning to taste and serve hot.

  • My #1 Secret Tip for this 15 bean soup crock pot recipe is to wait until the very end to add the tomatoes. Tomatoes are acidic, and adding them too early can slow down the beans as they soften. Stirring them in after the beans are tender gives me perfectly creamy beans every time. 
  • Always sort through the dried beans first: Even packaged bean mixes can occasionally contain small stones or damaged beans, so I give them a quick inspection before rinsing. 
  • Even cuts: Similar-sized vegetables cook at the same rate and create a more consistent texture throughout the soup.
  • Taste before adding extra salt: Different brands of broth and bean mixes vary in sodium, so I always wait until the soup is finished before adjusting the seasoning. 
  • Do not lift the lid too often: Every time the lid comes off, heat escapes and increases the cooking time. 
  • Rest: I let the soup rest for 10 minutes before serving. The broth thickens slightly as it sits, allowing the flavors to come together even more.
