Vegan Onion Gravy
You are going to love my easy 4-ingredient vegan onion gravy! It's so simple to make, but packed with caramelized onion flavor and the perfect creamy texture. It is a great topping or dip for so many meals beyond the classic mashed potatoes. Bonus, it's gluten free too!

Sauté the onions with the salt and broth or oil over medium low heat until brown, sticky and caramelized. This took me about 30 minutes for the perfect flavor, but taste and judge for yourself. My onions cooked down to about a ½ cup.
Put the onions along with the rest of the ingredients into a blender and blend on high until smooth and thick. Add more broth for a less pronounced flavor if you prefer, and add more potatoes for a thicker gravy.
Serve with healthy mashed potatoes or anything else you prefer!

I usually make it ahead of time so all the flavors meld together. It is absolutely delicious straight from the blender, but when I really want a rich and creamy gravy I make it ahead of time.

Work Smarter:Just grab the potatoes from the cooked batch you have going for those mashed potatoes. No extra work needed!
- Slow Cooker Method:To make this vegan onion gravy sauce really hands off, try cooking the onions in a slow cooker on low for 10 hours. I did not try this but a reader did and said it worked great.
- Do Not Over-Stir: My trick for the best caramelized onions is to leave them alone as much as possible! I don’t want them to burn, but I do want them to get a nice deep golden brown color! Monitor them, but only stir on occasion.
