Indian Bok Choy Recipe

Indian spiced bok choy is unbelievably flavorful thanks to the careful selection of bloomed spices. Between the caramelized onions, earthy cumin, mustard seeds, and tender greens, this quick stir fry turns a simple vegetable into a scene-stealing side dish. I have this ready in just 30 minutes and serve it with my favorite curries.

  • Heat your oil in a medium sized pan over medium-high heat. Add the spices and the green chile and stir until the mustard and cumin seeds pop.
  • Once the spices are popping, throw in your onions. Cook down the onions until they are caramelized.
  • Add the bok choy, and cook until the bok choy has cooked down. This will take about 10 minutes. Enjoy!

Notes

  • My #1 Secret Tip for this Indian spiced bok choy recipe is to bloom the spices fully before adding the vegetables. Heating the mustard seeds, cumin seeds, and turmeric directly in hot oil releases their flavor and aroma much more effectively than adding them later. Once the mustard seeds start popping, the oil becomes deeply infused and coats the bok choy equally during cooking.
  • Chop the bok choy small: I dice the stems and leaves fairly finely so everything softens quickly without turning stringy or chewy. 
  • Caramelize the onions patiently: A few extra minutes during this step adds sweetness that balances the slight bitterness of the greens. 
  • Avoid overcrowding: Too much bok choy packed into the pan traps steam and prevents the vegetables from sauteing properly.
  • Watch the spices closely: Mustard seeds can burn very fast once they begin popping, so I keep the heat around medium.
  • Cook until just tender: Bok choy tastes best when the stems still keep a little bite instead of becoming mushy.
