4 Ingredient Cilantro Lime Rice (Rice Cooker Recipe)

Bright lime juice, fluffy rice, and fresh cilantro turn this 4 ingredient cilantro lime rice into one of the easiest side dishes I make during busy weeks. I toss everything into the rice cooker and in just 35 minutes, I end up with soft, fragrant rice that complements almost every meal.

  • Combine rice, water, and lime juice in your rice cooker, and cook following your rice cooker's instructions.
  • Once cooked, remove lid and mix in sea salt and chopped cilantro.
  • Serve alone or as part of a meal!

Notes

  • My #1 Secret Tip for this 4 ingredient cilantro lime rice recipe is to let the cooked rice rest in the rice cooker for a few minutes before fluffing it. I noticed that immediately stirring freshly cooked rice can break the grains and create a sticky texture. Letting the steam settle briefly keeps the rice lighter and fluffier.
  • Use warm limes: I use my hand to roll the limes on the counter before juicing them, and the heat and movement of my hand help release juice more naturally. 
  • Chop cilantro small: Finely chopped cilantro spreads through the rice much better and prevents large leafy clumps, which always get stuck in your teeth. 
  • Taste before serving: Some limes are more tart than others, so I always taste the rice before serving and adjust with extra juice or salt if necessary. 
  • Use fresh rice: Freshly cooked rice absorbs the lime flavor best and stays softer than leftover refrigerated rice.
