Instructions

  • Thinly slice the kiwi fruit and strawberries.
  • Shred the mint leaves.
  • To serve, place ½ cup of cottage cheese into a serving bowl.
  • Top with fruit, chia seeds, shredded mint leaves and a drizzle of honey.
  • Serve and enjoy.

  • For a smoother, creamier cottage cheese filling place the cottage cheese into a high speed blender and blend until smooth then top with toppings.
  • Other fruits that can be used: cherries, mandarins, peaches, mango, banana.
  • Serve immediately or prepare ahead of time and store in the fridge.
  • Substitute the honey with maple syrup or coconut sugar if preferred. Or omit the honey for a recipe that has only 12 grams of natural sugar and 0 grams of added sugar per serving!
