Ingredients

  • 4 large peaches

  • ½ cup sugar

Instructions

  • Wash and remove the pits from the peaches.
  • Slice and transfer the peaches to a medium saucepan along with the sugar and water.
  • Bring to a boil, reduce heat and gently simmer for 15 minutes, stirring occasionally to prevent burning. The syrup will begin to reduce and thicken.

Notes

  • Do not have the heat too high when simmering, you don’t want the sugar to start to caramelize.
  • Any sweetener can be used for this recipe such as brown sugar, coconut sugar or even honey however these alternatives may change the color and flavor of the syrup.
  • Cooking times, color and flavor may vary based on how ripe the peaches are, the variety of peach used and the sugar used.
  • For a thicker syrup, you can use a potato masher to mash the cooked peaches before straining.
  • Don’t discard the cooked peaches, these can be stored in the fridge and are great added to smoothies, served on top of pancakes, waffles or even granola and yogurt.
  • Peach simple syrup can be frozen for up to 2 months in small ice cube trays and defrosted when needed.
  • This recipe makes approximately ¾ cup of peach simple syrup.
