Peach Simple Syrup

Wash and remove the pits from the peaches.
Slice and transfer the peaches to a medium saucepan along with the sugar and water.
Bring to a boil, reduce heat and gently simmer for 15 minutes, stirring occasionally to prevent burning. The syrup will begin to reduce and thicken.
Remove from the heat and allow to cool before straining through a fine mesh strainer.
Cool completely before transferring the syrup to a sterilized glass jar and store, sealed, in the fridge for up to 7 days.
- Do not have the heat too high when simmering, you don’t want the sugar to start to caramelize.
- Any sweetener can be used for this recipe such as brown sugar, coconut sugar or even honey however these alternatives may change the color and flavor of the syrup.
- Cooking times, color and flavor may vary based on how ripe the peaches are, the variety of peach used and the sugar used.
- For a thicker syrup, you can use a potato masher to mash the cooked peaches before straining.
- Don’t discard the cooked peaches, these can be stored in the fridge and are great added to smoothies, served on top of pancakes, waffles or even granola and yogurt.
- Peach simple syrup can be frozen for up to 2 months in small ice cube trays and defrosted when needed.
- This recipe makes approximately ¾ cup of peach simple syrup.
