Vegan Sweet Potato Pancakes

Easy vegan sweet potato pancakes are lightly sweetened with maple syrup and plenty of vegan chocolate chips!

This recipe has plenty of sweet potato flavor.


Combine all the ingredients, except the chocolate chips, in a high-speed blender and blend until smooth.

Blend Wet And Dry Ingredients:

Pour the thick batter into a large bowl and fold in the chocolate chips. Let the batter rest for 10 minutes before using it.

Add Chocolate Chips:

Heat a frying pan or large skillet over medium heat and pour in a 1/4 cup of batter into the hot pan.

Cook Pancakes:

Flip the pancakes and continue to cook for another 2 to 3 minutes or until cooked through. Repeat until you’ve used all the batter.

Flip Pancakes:

Enjoy with a dusting of powdered sugar or your favorite pancake toppings!
