Vegan Pumpkin Banana Bread

This Vegan Pumpkin Banana Bread is an easy recipe that requires minimal effort, with only 10 minutes of prep time.

They also happen to be dairy-free, vegan, gluten-free, and low in sugar.


Prep Oven, Make Chia Egg:

Prepare the chia egg by mixing the ground chia seeds and water together and set aside.

In a large bowl whisk together flour, baking powder, baking soda, salt and pumpkin spices until well combined.

Mix Dry Ingredients:

Mix Wet Ingredients:

In a separate bowl whisk the pumpkin puree, mashed banana, chia egg, almond milk, vanilla extract, oil and coconut sugar until smooth.

Combine Wet & Dry Ingredients:

Gently fold the dry ingredients into the wet ingredients.

Transfer to the prepared loaf pan and smooth off the top. Bake in preheated oven for 50-60 minutes.
