Vegan Gluten Free Oatmeal Raisin Cookies

Mix The Dry Ingredients:

In a large bowl, I combine the oats, almond flour, sugar, cinnamon, baking powder, and salt.

I fold in the raisins and pecans (if using), making sure everything is evenly mixed.

Add Raisins And Pecans:

I drop spoonfuls of the dough onto a baking sheet lined with parchment paper. For a flatter cookie, I like to gently press them down a bit.

Scoop The Dough:

I bake the cookies for 20-23 minutes, until they’re golden brown and crisp at the edges. They’ll harden a little more as they cool.

Bake Cookies:

I leave these on the counter overnight to fully ensure they are cool, since storing them warm will cause the outsides to soften.
