Feta Salad with Cucumbers, Tomatoes, and Lentils

This simple and quick Lentil and Feta Salad is made with cucumbers, juicy grape tomatoes, red onion, corn, and bell pepper.

This is what I like to call my emergency, super-fast, there’s-nothing-in-the-fridge-to-eat dinner.

ingredients

If you’re using dried lentils, prepare them by adding one cup of lentils to 2 cups of water. Cover and simmer on low for 20 minutes.

Prepare the Lentils:

Dice your cucumber, red onion, and bell pepper. Slice your grape tomatoes in half. Steam your corn.

Prep the Veggies:

Combine all of the ingredients together in a bowl. Fold in the feta cheese, and top with lemon juice.

Make the Salad!

Add salt and pepper to taste, enjoy cold!

Season and Taste!

Store leftovers in an airtight container in the refrigerator. It will keep for 3-4 days.
