Easy Roasted Air Fryer Carrots

These delicious, crispy, roasted air fryer carrots are unbelievably easy to make! Make them sweet, savory or spicy based on your preferences.   • Preheat the air fryer to 390°F or 180°C for five minutes.
  • Meanwhile, trim and wash the baby carrots. Cut each carrot in half lengthwise.
  • Mix the oil, garlic, salt, pepper, and thyme leaves in small or medium mixing bowl.
  • Add the carrots to the oil mixture and toss until carrots are coated.
  • Cover the base of the air fryer basket with carrots. Cook for ten minutes, gently tossing at the five minute mark to ensure even cooking, or until carrots are tender, lightly golden and soft inside.
  • Sprinkle with chopped parsley and serve immediately.

Notes

  • You can easily cook these carrots in the oven if you do not have an air fryer. The oven will just take longer!
  • Always preheat the air fryer, prior to cooking, to ensure you get the best results!
  • Store these leftover carrots in an airtight container in the refrigerator for up to four days.
  • You can use spray oil if preferred instead of olive oil. Lightly spray the carrots, sprinkle with seasoning and thyme, toss to coat. Continue to follow the remaining steps.
  • If you end up with really large carrots, you may need to cut them in half width wise and then in half (or thirds) again lengthwise. You want each carrot stick to be about 4 inches in length and about 1/2 inch wide.
