Vegan Coquito

Vegan coquito is made with a combination of coconut milk, coconut cream, vanilla extract, and white rum, along with a few other simple ingredients. This traditional Puerto Rican Christmas drink is perfect for the holiday season, but is actually comforting and delicious any time of year! The best part? It only takes 2 minutes of prep time and is naturally gluten-free too!

Instructions

  • Place all ingredients, except the rum, into a food processor and blend for 1 minute.
  • Remove and store in an airtight container for 3-4 hours in the fridge to allow it to chill completely and for the flavors to infuse.
  • Stir in the rum when ready to serve.
  • Serve cold in a glass topped with a cinnamon stick and a sprinkle of cinnamon.

Notes

  • This drink will thicken as it chills. Thin with additional oat milk if you prefer a thinner drink.
  • White rum can be swapped for dark rum or even coconut rum.
  • Adjust sweetness to taste, if you prefer a sweeter drink add a tbsp of maple syrup to the mix.
  • Rum can be omitted to make it kid-friendly or to turn it into a mocktail.
  • Adding the rum just before serving prevents the ingredients from separating.
  • This drink can be prepared ahead of time and stored in the fridge for up to 3 days.
