Bruschetta Burrata
This bruschetta burrata recipe is so simple to make, yet so luxurious to serve and eat! Lightly toasted crusty bread slices are topped with creamy burrata cheese, chopped fresh tomatoes, garlic, basil, a drizzle of olive oil and a balsamic glaze. Serve as an impressive appetizer, snack or even a quick and healthy lunch!

Preheat oven to 350 degrees F / 180 C. Line 2 baking sheets with parchment paper, set aside.
Slice the baguette into 12 x ¼ inch thick slices.
Brush both sides of the baguette slices with oil and arrange on prepared trays.
Bake for 20 minutes or until lightly golden brown.
Rotate the trays and turn the bread slices half way through the baking process (at the 10 minute mark) to ensure even cooking.
Set aside to cool.
Arrange the crostini on a serving platter.
Evenly divide the sliced burrata cheese, diced tomatoes and shredded basil leaves between the prepared crostini.
Season with cracked pepper, salt and a drizzle of balsamic glaze.
Enjoy immediately.
