Blackberry Simple Syrup

Bring the water, sugar, berries and lemon juice to a boil in a medium pot.
Reduce the heat and simmer for 10 minutes.
Using the back of a fork, spatula or a potato masher, mash the berries to release the juices.
Pour the syrup through a sieve to remove all seeds and pulp.
Transfer the syrup to a sterilized glass jar.
Store in the fridge for up to a month.
- Fresh or frozen berries can be used.
- No need to defrost frozen berries before using.
- Take care when straining the syrup as the syrup is extremely hot.
- This recipe can be easly doubled or even tripled.
- Discard the seeds and pulp.
