Preheat the oven to 350°F. Line a baking sheet with parchment paper. Heat oil and sauté the onion, garlic, mushrooms, spinach until softened.

PREPARE ZUCCHINI

Allow the mixture to cool. Slice the zucchini in half length-wise and scoop out the seeds with a spoon.
FILL ZUCCHINI SLICES
Transfer the zucchini slices to the baking tray face side up. Spread marinara sauce over the zucchini and layer with the mushroom mix and olives.

ADD CHEESE
Finally, top the zucchini with shredded mozzarella cheese.

BAKE
Bake the zucchini in the oven for 15 minutes or until the cheese is melted and golden brown.
