In a high speed food processor combine the raw walnuts and mushrooms. Pulse several times to chop the ingredients until the mixture resembles ground beef. Do not over-process! Transfer to a mixing bowl.
Heat the oil in a large skillet on medium heat and sauté the diced onion until soft. Next, add the minced garlic and walnut mixture to the pan and continue to sauté for 2-3 minutes.
Combine the remaining ingredients and stir.
Sauté for another 3 minutes to cook the taco filling completely.
Adjust seasoning to taste. Fill your tacos or burritos, and enjoy!
