VEGETARIAN TACO SOUP RECIPE
THE PICKY EATER
MAKE TORTILLA STRIPS
First, make the tortillas by cutting tortilla into quarters. Spray them with olive oil & place on baking dish. Bake for 10 mins at 350°F.
Next, halve the tomatoes lengthwise & place them on a roasting pan or baking dish. Spray lightly with olive oil, salt, & pepper, and bake at 350 for 40-45 minutes.
MAKE THE SOUP
In a pot over medium heat, cook the garlic and onions using oil with a couple pinches of salt for a minute.
STIR IN TOMATOES
Next, stir in the tomatoes and spices. Cook down for about five minutes until they have thickened.
PUREE THE SOUP
Remove from heat, add two cups of the broth and puree with a hand blender. Add more broth & puree until smooth. Bring back to a simmer for 10 minutes.
SIMMER & SERVE
Season with salt and pepper to taste. Top invididual portions with tomato salsa, goat cheese, and tortilla strips before serving. Enjoy!
