Heat a large nonstick skillet over medium-high heat. Add oil; swirl to coat. Add onion, bell pepper, and celery; sauté 10 minutes. Add garlic; cook 2-3 more minutes.
Cook brown rice according to package directions. For best results, cook in vegetable broth for more flavor. Add spices and kale to the large skillet, bring to a boil, then simmer on low heat.
