Heat the oil in an oven-safe pot or dutch oven over medium heat. Sauté the onion until soft and translucent.
Combine the rest of the ingredients from tomato pureé to salt, stirring to combine.
Mix in ½ cup of water and the cannellini beans and continue to simmer for 5 minutes.
Transfer the large pot of beans to the oven. Bake at 400 degrees F for 20-25 minutes. The sauce will thicken a bit. Remove the cooked beans from the oven and serve.
