Vegan Wellington

Vegan Wellington is filled with lentils, onions, carrots, tomatoes, garlic, and mushrooms, loaded up inside a flaky pastry.

Seasoned with herbs and completely nut-free, it’s literal perfection with every bite!

INGREDIENTS

Rinse & Boil Lentils:

Rinse lentils and add to a small saucepan with 2 cups of water. Bring to a boil over high heat.

Add coconut oil to a large skillet and allow to heat and melt over medium heat. Add onion and carrots and cook.

Saute Onion & Carrots:

Add Garlic & Mushroom:

Next, add the garlic, tomatoes, and sliced mushrooms to the frying pan.

Add Seasonings & Lentils:

Add thyme, rosemary, salt, and pepper to taste. Add cooked lentils and incorporate all ingredients together.

Finally, remove from heat and add Panko breadcrumbs – no need to transfer to a large bowl.
