Vegan Tikka Masala

This vegan tikka masala with tofu is quick, healthy, and super simple. It’s packed full of fragrant Indian spices, sweet tomatoes, and creamy coconut milk.

Use a tofu press to squeeze the excess moisture out of the tofu. Chop the block of tofu into bite-sized cubes.

Press Tofu, Chop Tofu:

Heat a teaspoon of olive oil in a nonstick skillet over medium-high heat. Add the tofu cubes in batches so they caramelize instead of steam.

Brown Tofu:

Add the remaining oil to the large pan and sauté the red onion, bell pepper, garlic, and ginger for 4 to 5 minutes, or until the onion is soft and translucent.

Sauté Aromatics:

Add the spices and stir to combine. Cook for another 2 minutes, until the mixture is fragrant.
