Warm the peanut butter in the microwave for 30 seconds. Transfer the peanut butter to a large mixing bowl along with the rest of the ingredients.
Using a spatula, mix the ingredients to form a cookie dough.
Scoop out a tbsp of the dough. Using clean hands, shape into balls and place on a baking tray lined with baking paper.
Repeat until all of the dough has been shaped into balls. Dough makes about 16 large balls or 20 smaller balls.
