Vegan Toaster Pastries (Pop Tarts) with Strawberry

WHISK DRY INGREDIENTS

Preheat oven to 338°F and line baking tray with parchment paper. Set aside. In a bowl, whisk together the flour and baking powder. Set aside.

MIX APPLESAUCE

Next, in a bowl, combine the applesauce with oil and vanilla. 

ADD APPLESAUCE

Add the applesauce mixture to the dry ingredients. Mix together with a rubber spatula until a dough forms. 

CHILL DOUGH

Shape into a ball, cover in plastic wrap and allow to rest in the fridge for 15 minutes.

ROLL THE DOUGH

Next, cut the dough in half. Place one half of the dough onto a sheet of baking paper, cover with another sheet of baking paper, and roll the dough out to ⅛-inch thick.

CUT INTO RECTANGLES

Using a pizza cutter, carefully cut the dough into four even rectangles. Repeat with the rest of the dough. 

FILL WITH STRAWBERRY

Place the dough rectangles onto the baking tray and spread a tablespoon of strawberry jam onto the centers of the dough. Be sure to leave space around the edges. 

TOP WITH DOUGH

Top each dough rectangle with another rectangle of dough and crimp the edges with a fork. 

BAKE

Bake the pop tarts in the oven for fifteen minutes. Allow the pop tarts to cool on a wire rack. 

GLAZE

In a small bowl, mix together the powdered sugar and coconut yogurt to form a smooth glaze. Add more powdered sugar to the glaze until desired thickness is met. Evenly glaze the pop tarts.
