How To Make Healthy Chocolate Truffles
Cook quinoa according to package directions. Cool slightly and set aside.
Process peanuts and dates in food processor until coarsely ground.
Add 2 cups cooked quinoa, peanut butter, chia seeds and cocoa, pulsing just until combined.
Transfer mixture to a large bowl. Using a cookie scoop or tablespoon, scoop out individual portions and shape into 24 balls – rolling between the palm of your hands. Roll in cinnamon sugar.
Place on a piece of parchment paper, or into candy cups / baking cups, if desired. Chill for 2 hours before serving.
