INGREDIENTS

STEP 1

SAUTE VEGETABLES

Heat the vegetable oil in a medium pot over medium heat. Add the onion and sauté, then add the bell peppers, garlic and jalapeno peppers and cook.

STEP 2

ADD RICE & SEASONING

Add the rice and spices then mix until combined

STEP 3

SIMMER RICE

Add the cold water and tomatoes, then bring the mixture to a boil. Lower the heat and let it simmer until all the liquid is absorbed

STEP 4

SERVE!

Take the rice off the heat, then add in the corn and cilantro and mix. and SERVE!

PRO TIP

For best results, use any variety of long grain rice. Short grain rice has higher starch content and doesn't need as much water.
