Lentil Loaf Recipe
Line a loaf pan with parchment paper & set aside. Sauté garlic & 1 tbsp oil in a pan over medium heat until fragrant.
Preheat oven to 350 degrees F, then add onion & carrot & sauté for 4-5 minutes.
Add the chopped shallots to the veggie mixture.
Place the cooked veggies in a large bowl. Add 2 cups of cooked lentils.
With a hand blender, puree the veggie/lentil mixture until it forms a smooth paste.
Then add walnuts & blend again. This can also be done with a food processor.
Add all the spices, the rest of the lentils, breadcrumbs, the flaxseed egg, 1 tbsp olive oil, balsamic vinegar, soy sauce, & salt.
Next, stir to combine.
Transfer the mixture to loaf pan and press firmly with a spoon.
Whisk tomato paste, balsamic vinegar, maple syrup, paprika, and salt. Spread it over the top of the loaf.
Spread evenly. Bake the loaf in the oven for 40 minutes or until golden brown on edges.
