In a large pot, heat oil over low heat. Add the onions and cook until golden. 

ADD SPICES

Next, add the cauliflower florets, curry powder, turmeric, sugar, cinnamon, and salt. 

ADD LIQUID

Add the coconut milk, and up to 1 cup of water (use more or less depending on how thin you want your soup to be).

SIMMER

Bring the soup to a low boil, reduce heat, and simmer for 10 minutes until cauliflower is tender. 

BLEND

With an immersion blender, blend the soup until creamy. You can also use a stand mixer just be sure to allow the soup to cool first. 

ENJOY

Serve the soup into soup bowls and top with cilantro and chopped cashews.
