Ingredients

Heat the olive oil in an oven proof skillet over medium heat. Add the onion and saute for 3-5 minutes. Add potato, zucchini, bell pepper and tomato and cook.

In a high-speed blender, blend the tofu, nutritional yeast, cornstarch, turmeric and plant based milk until smooth

Prepare Tofu Mixture

Pour the tofu mixture over the cooked vegetables directly into the pan and mix everything together.

Mix Together

Bake for 35 to 40 minutes at 375 degrees F until it is set in the middle and the dish is slightly golden on top. Slice into 8 even slicces and Serve!

Bake and Serve!

👉  For best results, be sure to use Silken tofu instead of regular tofu to create that creamy rich texture that makes it so good!
