The first thing you need to do is preheat the oven and grease a 9×13 baking dish with nonstick cooking spray.

Spray Baking Dish:

In a medium bowl, toss the sliced apples with cinnamon, nutmeg, lemon juice, salt, and a little bit of cornstarch. Add one tablespoon of the sugar to the apples. Toss well to coat.

Make Apple Filling:

Blend 1 and 1/4 cup of the oats in a food processor or high-speed blender until the oats resemble flour.

Blend Oats:

Add the oat flour to a large bowl and mix with remaining oats, brown sugar, baking powder, vanilla extract, nuts, and melted coconut oil.

Make The Streusel Topping:
