In a bowl, whisk together the chia seeds, soy milk, vanilla extract, cinnamon, nutmeg, and maple syrup. Place in the refrigerator to thicken for 10 minutes. 

POUR BATTER

Next, transfer the batter to a baking dish. Dip the bread slices into the mixture and soak for two minutes. Flip the bread and soak for one more minute.

HEAT

Remove bread. Heat a skillet over medium heat with coconut oil. Add the bread to the melted oil, cook for 2-3 minutes, flip, then cook for 2-3 more minutes. Remove the bread from the heat.

ENJOY

Repeat the steps with the rest of the soaked bread slices and enjoy with fruit, nuts, whipped cream, syrup, etc.
