Vegan Fondue

This easy vegan fondue recipe will quickly become a new favorite. It is the best comfort food for the winter months but delicious anytime of year.

It is creamy, versatile, and loaded with flavor. The best part? This healthy fondue only takes 30 minutes of active time to make and is a total crowd pleaser!

INGREDIENTS

SOAK THE CASHEWS:

Soak the cashews in room temperature water for 2 hours or overnight.

BOIL THE POTATO:

Boil the peeled and diced potato in a small saucepan over medium heat or high heat. Once soft, drain and set aside.

BLEND INGREDIENTS:

Drain the soaked cashews and add to a high-speed blender along with all other ingredients. Blend on high for 3-4 minutes or until smooth.

HEAT THE MIXTURE:

Transfer to a medium pot and heat on a low to medium-low heat, stirring continuously until thickened and stretchy, for about 5 minutes. Adjust seasoning to taste.

SERVE:

When the mixture is ready, it will coat the stirring spoon like this. Serve immediately or transfer the fondue to a melting pot to keep warm.
