Soak the cashews in room temperature water for 2 hours or overnight.

Boil the peeled and diced potato in a small saucepan over medium heat or high heat. Once soft, drain and set aside.

Drain the soaked cashews and add to a high-speed blender along with all other ingredients. Blend on high for 3-4 minutes or until smooth.

Transfer to a medium pot and heat on a low to medium-low heat, stirring continuously until thickened and stretchy, for about 5 minutes. Adjust seasoning to taste.

Serve immediately or transfer the fondue to a melting pot to keep warm.

Diced bread, vegan meat alternatives, boiled diced potatoes, steamed broccoli, olives or even carrots can all be used to dip in this delicious fondue.
