Combine the cinnamon and sugar in a small bowl. Cook the quinoa according to the package's directions. Combine the peanuts and dates until ground.
Next, add two cups cooked quinoa, peanut butter, chia seeds and cocoa pulsing just until combined.
FORM INTO BALLS
Form the mixture into 24 balls. Roll the balls in the cinnamon sugar mixture if desired. Chill for two hours.
Serve these vegan truffles for breakfast or snack.
Store the leftover bites in the refrigerator so they will last and stay firm.
