Vegan Black Bean Soup

Heat a large saucepan (or large dutch oven) over medium heat. Add oil to the pan and swirl to coat. Add onion and bell pepper. Cook for 3 minutes, stirring occasionally.

SAUTE VEGGIES:

Stir in oregano, garlic, cumin, chili powder, and salt. Cook for 30 seconds.

ADD SPICES:

Stir in the vegetable broth and 2 cans of black beans. Bring to a boil over medium-high heat, then reduce heat. Simmer for 10-20 minutes on low heat.

ADD BROTH & BEANS: 

Mash the beans in the pot with a potato masher or use an immersion blender until the soup has a chunky consistency.

MASH BEANS:

You don’t want it to be fully mashed! Stir in the lime juice to finish off the soup.
