Tofu Curry with Vegetables

Sauté the onion & two shopped cloves of garlic in 1/2 tsp oil in a pot over medium-high heat. Add 2 Tbsp curry powder & salt & stir until combined.

Next, add the coconut milk to the onion mixture & whisk to work out any clumps. Bring to a simmer over medium heat. Cook for five minutes.

Stir in the tofu & cook for a few minutes until the tofu has absorbed most of the flavors. Simmer the liquid on low heat until it has cooked down slightly, roughly five minutes.

Sauté the broccoli, asparagus, & pepper (or whatever veggies you use) chopped garlic over medium heat. Add salt, cayenne, & remaining curry power/cumin & other spices to taste. Cook until veggies are crisp.

Pour the tofu and coconut milk/curry mixture over the vegetables. Stir until combined.

Adjust seasoning. Add cashews and serve!
