Feta Salad with Cucumbers, Tomatoes, and Lentils

This simple and quick Lentil and Feta Salad is made with cucumbers, juicy grape tomatoes, red onion, corn, and bell pepper for a high protein, nutrient-packed salad hearty enough to make a meal!

If you’re using dried lentils, prepare them by adding one cup of lentils to 2 cups of water. Cover and simmer on low for 20 minutes.

Prepare the Lentils:

Dice your cucumber, red onion, and bell pepper. Slice your grape tomatoes in half. Steam your corn.

Prep the Veggies:

Combine all of the ingredients together in a bowl. Fold in the feta cheese, and top with lemon juice.

Make the Salad:

Add salt and pepper to taste, enjoy cold!

When dicing the vegetables, try to make them uniform in size. It makes the feta salad easier to eat when the cuts are the same size.
