Preheat oven to 400 degrees and grease a 12-cup muffin pan with nonstick cooking spray. In a medium bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt. Set aside.

In a separate bowl, beat together the sugar, brown sugar, and oil until smooth and well combined.

Add the eggs one at a time, beating between each addition.

Beat in the milk and vanilla.

Add the dry ingredients and mix until smooth.

Slowly add the dry ingredients to the wet ingredients. Don’t over-mix. If you overwork the batter, your muffins will be tough. Fold together until combined.
